
After a few years working from home, my partner started back at the office a few months ago. That has gotten me thinking a lot about the best easy vegan lunches he can take to work with him. So, I came up with a good list that I thought would be helpful for everyone! Lunches that are already best cold, can easily be reheated, or hand held delicious and healthy lunches. These lunches are easy to pack and will make everyone in the office instantly jealous!.
Vegan Lunches That Are Best Cold:

1. Tangy Broccoli Salad!
This salad is hearty and so good after sitting in the dressing overnight. It can be served warm, but I like it better cold.

2. Easy Lettuce Wraps!
Made with the best minced “pork” and yum yum sauce. These are so yummy and perfect to pack and assemble when you’re ready for lunch.

3. Dill Pickle “Chicken” Salad!
This is my favorite vegan chicken salad of all time. You can eat it on its own, with crackers or make a sandwich with it!

4. Vegan Larb-Inspired Tofu!
This is easy, so flavorful, high-protein and really good as a cold salad. That is the usual way to eat larb.

5. Orange Peanut Tofu Satay Noodle Salad!
This noodle salad is good warm and cold! So you can eat as is or warm it up if you prefer.

6. Crispy Mediterranean Tofu with Chopped Salad!
This crispy tofu is so good served cold with the easy and tangy chopped salad.

7. BBQ “Chicken” Skewers with Green Goddess Chopped Salad!
This is another good hot or cold. You can reheat the “chicken” and then eat, or just eat everything cold. I prefer it all cold.
Warm Lunches That Are Excellent Reheated:

8. Creamy Spinach Ramen!
This is perfect to reheat, I just keep the broth and cooked noodles separate, then combine after reheating.

9. Easy Miso Soup!
This soup is really easy and so delicious reheated. It develops a lot of flavor as it sits.

10. One Pot “Beef” Taco Soup!
This super simple one pot soup is another great to reheat soup! It is creamy, delicious and filling.

11. Quick and Easy Broccoli Pasta!
This is the easiest meal on the planet and it is perfect reheated!

12. Vegan Kid’s(and adult’s) Cuisines!
Nostalgic meal alert! These were actually tested and designed by me to be frozen and reheated for lunch!

13. Spicy Jalapeno Tofu Bowls!
These rice and tofu bowl with the greatest cilantro sauce and perfect in everyway and reheat very well.

14. Togarashi Brussels Sprouts with Soba Noodle Salad!
Roasted brussels sprouts spiced with togarashi and served with soba noodle salad. This is another meal that can be either hot or cold. The soba noodle salad is amazing cold, and the brussels are good either way!
Handheld Delights:

15. Falafel Burgers!
Served with whipped dill “feta” and date ketchup! They are the perfect lunch.

16. BBQ Tofu Sandwiches!
So simple, you’ll be amazed by how totally yummy they are.

17. Vegan Gyros!
Vegan “Chicken” Gyros are the easiest thing in the world and make the best lunch!

18. Vegan Lunch Meat!
Did you know you could make your own super easy, vegan and gluten-free lunch “meat”? Well, I highly recommend this lunch meat for all your sandwich needs.

19. Blackberry, Basil and “Ricotta” Pressed Sandwiches!
I’m obsessed with this summery pressed sandwich. It is seriously the best trust me.
The best easy vegan lunches are flavorful, full of protein, veggies and carbs. They are filling and perfect to get you through the rest of your day!
